Popular burger joint The Skirted Heifer adds second location to northeast Colorado Springs

The popular burger restaurant, The Skirted Heifer, is bringing a second location to northeast Colorado Springs, according to an article posted to The Gazette Wednesday.

The original location opened on 204 N. Tejon Street in 2014 and is owned by The Megyeri family. They specialize in grass-fed burgers covered in an extra layer of melted cheese that resembles a skirt when placed on a bun.

It also gained popularity in 2015 after being featured on The Food Networks, “Diners, Drive-Ins and Dives,” which spotlights mom-and-pop, comfort-food restaurants around the country.

Suzette Megyeri told The Gazette the newest location will open in the Dublin Commons III retail center with a projected date of February 1, 2019. She said the idea to open it in the Powers corridor came as the Colorado Springs area continues to grow over the last 15 to 20 years.

The Powers location also features a number of shopping centers, department stores, groceries, local and chain restaurants, and is home to several neighborhoods along both sides of the roadway.

“I’m real confident that we’ve got enough of a following that we can make a living and give some more jobs out there,” Suzette told The Gazette.

The Megyeri’s 25-year-old son, named Kevin, will own and operate the second Skirted Heifer. Kevin is a 2017 graduate of Colorado State University-Pueblo, with two degrees in economics and business management. He has also worked as general manager of the downtown Skirted Heifer.

According to the Gazette, the second Skirted Heifer will be about twice the size of the first, around 1,400 square feet. It will also employ 25 or more people and have a menu that almost mirrors the original downtown location.

The only major difference to the new Powers location’s menu is it will feature homemade ice cream sandwiches instead of frozen custard. Kevin Megyeri says that’s because a neighboring restaurant will be a frozen yogurt establishment and the family wants to avoid competition.
