Woman shows St. Patrick’s Day spirit in Colorado Springs
Corned beef and cabbage were on the dinner menu Tuesday night for some residents at the Regency Tower apartments in southwest Colorado Springs.
The complex, occupied mostly by retirees and seniors, enjoyed the meal courtesy of resident Angelis Cole.
“I did this before at the last place I lived,” she said. “I moved here last year and decided to do it again. The management let me.”
Cole spent the day cooking and decorating the room where the dinner was held. She said 18 people initially registered for the meal but the number eventually reached 50.
“I love St. Patrick’s Day,” she said. “I love parties period and every party that we have, I try to live it up to the fullest.”
Cole said the holiday represents joy and fellowship to her.
