Colorado Springs restaurant celebrates Cinco de Mayo in-person after only offering take-out in 2020

COLORADO SPRINGS, Colo. (KRDO) -- Salsa on the Rock Fresh Mexican Grill in Northwest Colorado Springs is opening up its dining room to customers this Cinco De Mayo after only taking to-go orders in 2020.

Restaurant owner Scott Morrissey said though take-out sales were great, it's not the same as getting to celebrate with their customers.

"It was very new to everybody, it was like nothing we ever experienced before," said Morrissey. "We're just so happy to be open now. We've got drink specials for our margaritas, we've got Cadillac margaritas for $5."

Morrissey says celebrating safely is still front of mind. Tables are still spaced six feet from one another, and booths are divided by hand-painted wooded dividers for both safety and privacy purposes.

Despite restaurants getting the green light to operate at full capacity, Salsa on the Rock is still easing into a full reopening; at 75% capacity for now.

The restaurant will be serving two-for-$5 tacos in honor of Cinco De Mayo.
