Cuban food truck in Southern Colorado sees uptick during pandemic

COLORADO SPRINGS, Colo. (KRDO) -- With El Paso County going into level red COVID-19 restrictions, many restaurants are bracing themselves for what is to come, but food trucks seem to have found a way to survive.

'Lucy I'm Home' is a Cuban food truck in Southern Colorado that has recently seen an uptick in sales during the pandemic. It's one of over a dozen food trucks that are frequently touring around Colorado Springs.

Owner of the zesty truck, Hector Diaz is no stranger to hardship. He came to the United States when he was 10-years-old, fleeing the Cuban revolution. So when the pandemic came around, his grit to continue to stay open kicked in.

The Cuban cuisine has increased their sales mostly during COVID-19 outbreak. With the restaurants closing down indoor dining, that's something this food truck does not have to worry about. They feel pretty confident about their customers moving into the COVID-19 surge. Unfortunately, it is at the expense of restaurants.

Thursdays: 6650 Corporate Drive

Fridays: 1660 So. Circle

Saturdays: 165 Fontaine Blvd.
